Food Glossary
Large, dry white beans, elongated and flat in shape, that are typical from Asturias and are the primary ingredient in the preparation of fabada (a typical Asturian bean stew). There are various types (Roxa, Verdina, Fabón...), but the most highly regarded are those known as Granja Asturiana, encompassed in the Protected Geographic Indication (PGI) Faba Asturiana. These legumes are rich in carbohydrates, proteins and fibre. Their production is scanty (some 75,000 tonnes), although it is slowly increasing.
