Food Glossary
A type of red pepper, which grows especially in the region of Murcia. Ñoras are small, roundish and slightly spicy if eaten fresh, although they are primarily used once sun-dried. Sun-dried ñoras are rehydrated in water, and the intense, darkish meat stuck to the tough skin is scraped off to give flavor to rice dishes and stews or make romesco sauce, to name but a few uses.
